Ingredients
- 1 ½ lbs ground beef
- 5 Tbsp Korean BBQ paste
- 1/2 C Mayonnaise
- 1 cup kimchi, puréed or finely chopped, excess liquid strained out
- 2 ea napa cabbage leaves, cut into thin strips
- 1 ea medium carrot, cut into long match sticks or shredded
- 1/2 cucumber, seeds removed, cut into long match sticks or thin strips
- 1 ea scallion, thinly sliced
- 1/2 tsp white sesame seeds
- 1/2 tsp black sesame seeds
- 1/2 tsp soy sauce
- 1/2 tsp rice wine vinegar
- 4 ea sesame seed buns
Preparation
- Mix BBQ paste into the ground beef and divide into 4 equal patties and turn on the grill.
- Whisk together mayo and strained kimchi purée.
- Grill burgers to desired temperature and remove. Allow them to rest for about 5 minutes. Place buns on the grill until lightly toasted, about 15 to 30 seconds.
- Mix the napa cabbage, carrot, cucumber, scallion, sesame seeds, soy sauce and vinegar.
- Place the burger on the bun, top with kimchi mayo and napa slaw.
