Ingredients
- 4 ea hot dogs
- 4 ea hot dog buns
- 1/4 C white onion, small dice or small rough chop
- A small hand full of fresh cilantro leaves
- 2 ea rings of pineapple, about ½ in thick
- 4 ea wedges of lime
- Your favorite salsa
- Vegetable oil
- Salt
Preparation
- Brush a light coating of oil on the pineapple and grill 1 minute on both sides or until slightly charred. When cooled, cut into small dice or small rough chop and mix in a pinch of salt.
- Grill the hot dogs. Toast the buns on the grill, about 15 to 30 seconds on each side.
- To assemble, place the dogs in the buns, top with your favorite salsa, sprinkle on the white onion, grilled pineapple, cilantro leaves. Finish with a squeeze of lime.
