Ingredients
- 4 ea slices rustic Italian loaf
- 2 ea medium ripe but firm nectarines, stone removed and cut into 6
- Zest of half a lemon
- Juice of half a lemon
- 1/4 tsp fresh thyme leaves, roughly chopped
- 6 ea prosciutto slices, ripped in half
- 1/3 C crumbled goat cheese
- 4 ea medium mint leaves
- Extra virgin olive oil
- Salt and pepper
Preparation
- Dress nectarine slices with lemon zest and juice, thyme, salt and pepper and a drizzle of olive oil. Mark each side on the grill for 45 to 60 seconds, careful they do not cook too much or they will get mushy.
- Toast bread slices on the grill until marked and slightly charred, about 30 to 45 second each side.
- To assemble, lay out warm grilled bread, drizzle on extra virgin olive oil, top each slice with 3 pieces of grilled nectarine, add 3 pieces of prosciutto, evenly distribute the crumbled goat cheese, finish with torn mint, black pepper and a drizzle of extra virgin olive oil.
